  • 250g sweet potato, mashed
  • 200g flour
  • 100g sugar
  • 2 eggs
  • 150g blueberries
  • 100g butter
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 180°C (350°F) and grease a cake pan.
  2. Boil the sweet potatoes until soft, then mash them and let cool.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the mashed sweet potatoes and vanilla extract until combined.
  6. In another bowl, whisk together the flour and baking powder.
