Sunflower Seed Crusted Salmon

Ingredients:
- 2 salmon fillets (150g each)
- 50g sunflower seeds
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Salt to taste
- Pepper to taste
- Fresh herbs (such as dill or parsley) for garnish
Instructions:
- Preheat the oven to 200°C (400°F).
- In a food processor, pulse the sunflower seeds until coarsely chopped, not powdered.
- In a bowl, mix the olive oil, lemon juice, salt, and pepper.
- Brush the salmon fillets with the olive oil mixture.
- Press the chopped sunflower seeds onto the top of each salmon fillet to create a crust.
- Place the salmon fillets on a baking tray lined with parchment paper.
