Sunflower Seed Crusted Salmon

Ingredients:

  • 2 salmon fillets (150g each)
  • 50g sunflower seeds
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (such as dill or parsley) for garnish

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. In a food processor, pulse the sunflower seeds until coarsely chopped, not powdered.
  3. In a bowl, mix the olive oil, lemon juice, salt, and pepper.
  4. Brush the salmon fillets with the olive oil mixture.
  5. Press the chopped sunflower seeds onto the top of each salmon fillet to create a crust.
  6. Place the salmon fillets on a baking tray lined with parchment paper.
  7. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
