Stuffed Zucchini Boats

Delicious and healthy stuffed zucchini boats, perfect for a light snack or appetizer. Filled with savory vegetables and topped with cheese, these boats are both satisfying and easy to make!

Ingredients:

  • 2 medium zucchini
  • 1 cup diced tomatoes
  • 1/2 cup chopped onion
  • 1/2 cup shredded cheese

Instructions:

  1. Preheat the oven to 190°C (375°F).
  2. Cut the zucchinis in half lengthwise and scoop out the insides to create boats.
  3. In a skillet, sauté the chopped onion until tender, then add the diced tomatoes and cook for another 5 minutes.
  4. Stuff the zucchini halves with the tomato and onion mixture.
  5. Sprinkle shredded cheese on top of the stuffed zucchinis.
  6. Place the stuffed zucchinis in a baking dish and bake for about 20-25 minutes, until the zucchinis are tender and the cheese is bubbly.
