Stuffed Zucchini Boats

Delicious stuffed zucchini boats filled with a savory mixture of vegetables and spices, perfect as an appetizer for any gathering.

Ingredients:

  • 2 medium zucchinis
  • 1 cup mushrooms, chopped
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 tablespoon olive oil
  • Salt
  • Pepper
  • 1/4 cup grated cheese (optional)

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Cut the zucchinis in half lengthwise and scoop out the center to create boats.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  4. Add the chopped mushrooms and cook until softened.
  5. Stir in the diced tomatoes and season with salt and pepper. Cook for another 5 minutes until everything is well combined.
  6. Fill the zucchini boats with the vegetable mixture.
  7. If desired, sprinkle grated cheese on top.
  8. Place the stuffed zucchinis in a baking dish and bake for 20-25 minutes.
  9. Serve warm as a delightful appetizer.
