Stuffed Zucchini Boats

Delicious and healthy stuffed zucchini boats filled with seasoned vegetables and topped with cheese, perfect for a light appetizer.

Ingredients:

  • 2 medium zucchini
  • 1 cup diced bell pepper
  • 1 cup diced onion
  • 1 cup diced tomato
  • 100 grams cheese, shredded

Instructions:

  1. Preheat your oven to 190°C (375°F).
  2. Cut the zucchinis in half lengthwise and scoop out the center to create boats.
  3. In a skillet, heat a little oil and sauté the onion and bell pepper until soft.
  4. Add the diced tomato and cook for about 5 minutes until the mixture thickens.
  5. Fill each zucchini boat with the vegetable mixture and top with shredded cheese.
  6. Place the stuffed zucchinis on a baking tray and bake for 20 minutes until the cheese is bubbly and golden.
