Stuffed Sweet Potato Bites

Delicious and wholesome stuffed sweet potato bites perfect for a snack, filled with healthy ingredients and bursting with flavor.

Ingredients:

  • 2 medium sweet potatoes
  • 1/2 cup black beans, cooked
  • 1/2 cup corn, cooked
  • 1/4 cup cheese, shredded
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • 1/2 teaspoon paprika

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. Wash the sweet potatoes thoroughly and pierce them with a fork.
  3. Place the sweet potatoes on a baking tray and bake for about 45 minutes or until tender.
  4. While the sweet potatoes are baking, prepare the filling by mixing black beans, corn, shredded cheese, salt, pepper, and paprika in a bowl.
  5. Once the sweet potatoes are cooked and cool enough to handle, slice them in half lengthwise and scoop out a bit of the flesh to make space for the filling.
  6. Fill each sweet potato half with the black bean and corn mixture, topping with additional cheese if desired.
  7. Return the filled sweet potatoes to the oven for an additional 10 minutes or until the cheese is melted and bubbly.
