Stuffed Sweet Potato Bites

Ingredients:
- 2 medium sweet potatoes
- 1/2 cup black beans, cooked
- 1/2 cup corn, cooked
- 1/4 cup cheese, shredded
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
- 1/2 teaspoon paprika
Instructions:
- Preheat your oven to 200°C (400°F).
- Wash the sweet potatoes thoroughly and pierce them with a fork.
- Place the sweet potatoes on a baking tray and bake for about 45 minutes or until tender.
- While the sweet potatoes are baking, prepare the filling by mixing black beans, corn, shredded cheese, salt, pepper, and paprika in a bowl.
- Once the sweet potatoes are cooked and cool enough to handle, slice them in half lengthwise and scoop out a bit of the flesh to make space for the filling.
- Fill each sweet potato half with the black bean and corn mixture, topping with additional cheese if desired.
- Return the filled sweet potatoes to the oven for an additional 10 minutes or until the cheese is melted and bubbly.
