Ingredients:
- 2 bell peppers
- 100g quinoa
- 50g corn
- 1 onion
- 2 cloves garlic
- 1 tsp olive oil
- salt
- pepper
Instructions:
- Preheat the oven to 180°C.
- Cut the tops off the bell peppers and remove the seeds.
- In a pot, cook the quinoa according to package instructions.
- In a skillet, heat olive oil over medium heat, add chopped onion and minced garlic, and sauté until softened.
- Mix the cooked quinoa and corn into the onion and garlic mixture. Season with salt and pepper.
- Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes.
