Stuffed Bell Peppers

Delicious and healthy stuffed bell peppers filled with a mix of quinoa, vegetables, and spices, perfect for a quick snack.

Ingredients:

  • 2 bell peppers
  • 100g quinoa
  • 50g corn
  • 1 onion
  • 2 cloves garlic
  • 1 tsp olive oil
  • salt
  • pepper

Instructions:

  1. Preheat the oven to 180°C.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a pot, cook the quinoa according to package instructions.
  4. In a skillet, heat olive oil over medium heat, add chopped onion and minced garlic, and sauté until softened.
  5. Mix the cooked quinoa and corn into the onion and garlic mixture. Season with salt and pepper.
  6. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes.
