Stuffed Bell Peppers

A delicious appetizer of bell peppers stuffed with a savory mixture of vegetables and quinoa, perfect for a healthy start to your meal.

Ingredients:

  • 2 bell peppers
  • 100g quinoa
  • 1 onion
  • 100g corn
  • 1 tomato
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a saucepan, cook the quinoa according to package instructions, then set aside.
  4. In a skillet, heat olive oil over medium heat, add chopped onion and cook until translucent.
  5. Add corn and diced tomato to the skillet, cooking for another 3-4 minutes.
  6. Mix the cooked quinoa with the sautéed vegetables, and season with salt and pepper.
  7. Stuff the mixture into the prepared bell peppers.
  8. Place the stuffed bell peppers in a baking dish and cover with foil.
  9. Bake in the preheated oven for 25-30 minutes until the peppers are tender.
