Ingredients:

  • 2 bell peppers
  • 1 carrot
  • 1 zucchini
  • 1 onion
  • 100g cheese

Instructions:

  1. Preheat the oven to 180°C.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Finely chop the onion, carrot, and zucchini.
  4. In a pan, sauté the onion until translucent.
  5. Add the carrot and zucchini, and cook until softened.
  6. Spoon the vegetable mixture into the bell peppers.
  7. Top with grated cheese.
  8. Place the stuffed peppers on a baking tray and bake for 25 minutes.
