Stuffed Bell Peppers

These stuffed bell peppers are a delightful snack filled with a savory mixture of vegetables and spices, perfect for a healthy treat.

Ingredients:

  • 2 bell peppers
  • 100g quinoa
  • 1 onion
  • 100g corn
  • 1 tsp olive oil
  • Salt to taste
  • Pepper to taste

Instructions:

  1. Preheat the oven to 180°C.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a pot, cook the quinoa according to package instructions, then set aside.
  4. In a skillet, heat the olive oil and sauté the chopped onion until translucent.
  5. Add the corn and cooked quinoa to the skillet and mix well. Season with salt and pepper.
  6. Stuff each bell pepper with the quinoa mixture, packing it in nicely.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake in the preheated oven for 30 minutes, then uncover and bake for an additional 10 minutes until the peppers are tender.
