Delicious and satisfying stuffed bell peppers filled with a savory mixture of quinoa and vegetables, perfect as a healthy snack.

Ingredients:

  • 2 bell peppers
  • 100g quinoa
  • 1 onion
  • 100g mushrooms
  • 50g cheese

Instructions:

  1. Preheat the oven to 180°C.
  2. Cook the quinoa according to package instructions.
  3. In a skillet, sauté chopped onions and mushrooms until soft.
  4. Mix the sautéed vegetables with cooked quinoa and season to taste.
  5. Cut the tops off the bell peppers and remove seeds.
  6. Stuff the bell peppers with the quinoa mixture and top with cheese.
  7. Place stuffed peppers in a baking dish and bake for 25-30 minutes until peppers are tender.
