Ingredients:
- 2 bell peppers
- 100g rice
- 50g onion
- 2 cloves garlic
- 100g tomato
- 1 tablespoon olive oil
Instructions:
- Preheat the oven to 180°C.
- Cut the tops off the bell peppers and remove the seeds.
- In a pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the rice and diced tomato, stir to combine, and cook for about 2-3 minutes.
- Fill each bell pepper with the rice mixture and place in a baking dish.
- Add a splash of water to the bottom of the dish, cover with aluminum foil, and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes until the peppers are tender.
