Stuffed Bell Peppers

Delicious and colorful stuffed bell peppers filled with a flavorful mixture of vegetables and spices, perfect as an appetizer or side dish.

Ingredients:

  • 2 bell peppers
  • 100g rice
  • 50g onion
  • 2 cloves garlic
  • 100g tomato
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the oven to 180°C.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  4. Add the rice and diced tomato, stir to combine, and cook for about 2-3 minutes.
  5. Fill each bell pepper with the rice mixture and place in a baking dish.
  6. Add a splash of water to the bottom of the dish, cover with aluminum foil, and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10 minutes until the peppers are tender.
