Ingredients:

  • 2 medium zucchini, grated
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • 50g all-purpose flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp chili flakes
  • vegetable oil for frying

Instructions:

  1. Grate the zucchini and place it in a clean kitchen towel, squeeze out excess moisture.
  2. In a bowl, combine grated zucchini, chopped onion, minced garlic, eggs, flour, salt, pepper, and chili flakes. Mix well.
  3. Heat a frying pan over medium heat and add some vegetable oil.
  4. Scoop small portions of the batter into the hot oil, flattening them slightly with a spatula.
  5. Fry until golden brown on both sides, about 3-4 minutes per side.
  6. Transfer the fritters to a plate lined with paper towels to absorb excess oil, and serve warm.
