Savory Veggie Bread

A delicious and moist savory bread packed with various vegetables, perfect as a side or a main dish.

Ingredients:

  • 300g flour
  • 100g grated carrot
  • 50g finely chopped onion
  • 50g chopped zucchini
  • 1 tsp salt
  • 1 tsp sugar
  • 1 packet of yeast (7g)
  • 200ml warm water
  • 2 tbsp olive oil

Instructions:

  1. In a mixing bowl, combine the warm water and yeast, letting it sit for about 10 minutes until frothy.
  2. In another bowl, mix the flour, salt, and sugar together.
  3. Add the grated carrot, chopped onion, and zucchini to the flour mixture and combine well.
  4. Pour the yeast mixture and olive oil into the dry mixture and knead until a smooth dough forms.
  5. Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour or until it doubles in size.
  6. Preheat the oven to 180°C (350°F).
  7. Once risen, punch down the dough and shape it into a loaf.
  8. Place the loaf in a greased loaf tin and let it rise again for 30 minutes.
  9. Bake in the preheated oven for about 30-35 minutes or until golden brown and hollow sounding when tapped.
