Ingredients:
- 300g flour
- 100g grated carrot
- 50g finely chopped onion
- 50g chopped zucchini
- 1 tsp salt
- 1 tsp sugar
- 1 packet of yeast (7g)
- 200ml warm water
- 2 tbsp olive oil
Instructions:
- In a mixing bowl, combine the warm water and yeast, letting it sit for about 10 minutes until frothy.
- In another bowl, mix the flour, salt, and sugar together.
- Add the grated carrot, chopped onion, and zucchini to the flour mixture and combine well.
- Pour the yeast mixture and olive oil into the dry mixture and knead until a smooth dough forms.
- Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour or until it doubles in size.
- Preheat the oven to 180°C (350°F).
- Once risen, punch down the dough and shape it into a loaf.
- Place the loaf in a greased loaf tin and let it rise again for 30 minutes.
- Bake in the preheated oven for about 30-35 minutes or until golden brown and hollow sounding when tapped.
