Ingredients:

  • 2 medium potatoes, grated
  • 1 medium carrot, grated
  • 1 medium zucchini, grated
  • 1 small onion, finely chopped
  • 100g flour
  • 2 eggs
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. In a bowl, combine the grated potatoes, carrot, zucchini, and chopped onion.
  2. Add the flour and mix well until the vegetables are coated.
  3. Beat the eggs separately and add them to the mixture, stirring until everything is well combined.
  4. Season with salt and pepper to taste.
  5. Heat oil in a frying pan over medium-high heat.
  6. Drop spoonfuls of the mixture into the hot oil and flatten them slightly with the back of the spoon.
  7. Fry for about 3-4 minutes on each side or until golden brown.
  8. Remove from the pan and place on paper towels to absorb excess oil.
  9. Serve warm with a dip of your choice.
