Ingredients:

  • 200g carrot, grated
  • 150g zucchini, grated
  • 50g green onion, chopped
  • 2 eggs
  • 100g flour
  • Salt and pepper to taste
  • Sunflower oil for frying

Instructions:

  1. In a bowl, combine the grated carrot and zucchini along with chopped green onions.
  2. In a separate bowl, beat the eggs and then combine them with the carrot and zucchini mixture.
  3. Gradually add in the flour, mixing until well combined. Season with salt and pepper.
  4. Heat sunflower oil in a frying pan over medium heat.
  5. Scoop tablespoons of the mixture onto the hot pan, flattening them slightly to form fritters.
  6. Cook for about 3-4 minutes on each side or until golden brown and crispy.
  7. Remove the fritters and drain on paper towels to remove excess oil.
