Delicious and crispy savory vegetable fritters made with a combination of carrots and zucchini, perfect as a healthy snack option.

Ingredients:

  • 250g carrot
  • 250g zucchini
  • 1 onion
  • 2 eggs
  • 50g flour
  • Salt to taste
  • Pepper to taste
  • Sunflower oil for frying

Instructions:

  1. Grate the carrot and zucchini into a bowl.
  2. Finely chop the onion and add it to the grated vegetables.
  3. Add the eggs, flour, salt, and pepper to the mixture and combine until well mixed.
  4. Heat sunflower oil in a frying pan over medium heat.
  5. Take spoonfuls of the mixture and carefully drop them into the hot oil, flattening them slightly.
  6. Cook for about 3-4 minutes on each side until golden brown and crispy.
  7. Remove from the pan and place on a paper towel to absorb excess oil.
  8. Serve warm with your favorite dipping sauce.
