Ingredients:

  • 500g flour
  • 300ml water
  • 7g yeast
  • 10g salt
  • 30ml olive oil
  • 1 carrot, grated
  • 1 zucchini, grated
  • 1 onion, finely chopped
  • 1 bell pepper, chopped

Instructions:

  1. In a large bowl, mix the flour, yeast, and salt.
  2. In another bowl, combine the water and olive oil, then mix them into the dry ingredients until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Add the grated carrot, zucchini, chopped onion, and bell pepper to the dough and knead until well combined.
  5. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Preheat the oven to 220°C (425°F).
  7. Once the dough has risen, punch it down and spread it out on a baking tray lined with parchment paper.
  8. Create dimples in the surface with your fingers, drizzle with olive oil, and sprinkle some salt on top.
  9. Bake for 20-25 minutes or until the focaccia is golden brown.
  10. Let it cool slightly before slicing and serving.
