Savory Vegetable Focaccia

A delightful and aromatic focaccia bread loaded with fresh vegetables like zucchini, bell pepper, and spinach. Perfect as an appetizer or side dish!

Ingredients:

  • 500 g flour
  • 300 ml water
  • 10 g salt
  • 1 packet dry yeast
  • 50 ml olive oil
  • 150 g zucchini, thinly sliced
  • 100 g bell pepper, diced
  • 100 g spinach

Instructions:

  1. In a large mixing bowl, combine the flour and salt.
  2. In a small bowl, dissolve the dry yeast in warm water and allow it to activate for about 5 minutes.
  3. Add the yeast mixture and olive oil to the flour, and mix until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm area until doubled in size, about 1 hour.
  6. Preheat the oven to 220°C (428°F).
  7. Once risen, punch down the dough and spread it onto a greased baking sheet.
  8. Arrange the sliced zucchini, diced bell pepper, and spinach evenly over the top of the dough, pressing them slightly into the surface.
  9. Drizzle with a little more olive oil, and sprinkle with sea salt.
  10. Bake in the preheated oven for about 20-25 minutes or until golden brown. Let it cool slightly before slicing and serving.
