Ingredients:

  • 300g flour
  • 100g carrot (grated)
  • 100g zucchini (grated)
  • 50g onion (finely chopped)
  • 150ml water
  • 7g dry yeast
  • 5g salt
  • 10g sugar

Instructions:

  1. Preheat the oven to 190°C (375°F).
  2. In a bowl, mix the flour, salt, and sugar together.
  3. In another bowl, combine the grated carrot, grated zucchini, and chopped onion.
  4. In a small saucepan, warm the water to about 37°C (98°F) and mix in the dry yeast, allowing it to activate for about 5 minutes.
  5. Combine the flour mixture with the vegetable mix, then gradually add the yeast mixture, mixing until a dough forms.
  6. Knead the dough on a floured surface for about 10 minutes until it is smooth and elastic.
  7. Place the dough in a bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour until doubled in size.
  8. After rising, punch down the dough and shape it into a loaf or desired shape.
  9. Place on a baking sheet lined with parchment paper and let it rise for another 30 minutes.
  10. Bake in the preheated oven for 25-30 minutes or until golden brown and sounds hollow when tapped on the bottom.
  11. Allow to cool before slicing.
