Ingredients:

  • 500g flour
  • 10g sugar
  • 7g yeast
  • 300ml warm water
  • 50ml sunflower oil
  • 100g zucchini, grated
  • 50g onion, finely chopped
  • 1 tsp salt

Instructions:

  1. In a large bowl, combine warm water and sugar. Sprinkle the yeast on top and let it sit until frothy, about 5-10 minutes.
  2. In another bowl, mix the flour and salt.
  3. Add the frothy yeast mixture and sunflower oil to the flour mixture. Stir to combine.
  4. Add the grated zucchini and chopped onion. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Preheat your oven to 180°C (350°F).
  7. Once the dough has risen, punch it down gently and shape it into a loaf.
  8. Place the loaf in a greased loaf pan and let it rise for another 30 minutes.
  9. Bake in the preheated oven for 25-30 minutes or until golden brown and sounds hollow when tapped on the bottom.
  10. Allow the bread to cool on a wire rack before slicing.
