A delicious and wholesome bread packed with nutritious vegetables like carrot and zucchini, perfect for sandwiches or as a side.

Ingredients:

  • 250g flour
  • 100g grated carrot
  • 100g grated zucchini
  • 5g salt
  • 5g sugar
  • 5g active dry yeast
  • 150ml warm water
  • 30g butter

Instructions:

  1. In a bowl, combine warm water and sugar, then sprinkle the yeast on top. Let it sit for about 5 minutes until frothy.
  2. In a separate large mixing bowl, combine the flour and salt.
  3. Add the grated carrot, grated zucchini, and melted butter to the flour mixture.
  4. Pour the yeast mixture into the bowl with the flour and vegetables, and mix until a dough forms.
  5. Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  7. Once risen, punch down the dough and shape it into a loaf.
  8. Place the loaf in a greased bread pan, cover, and let it rise again for about 30 minutes.
  9. Preheat the oven to 180°C (350°F).
  10. Bake the bread for about 30-35 minutes or until golden brown and sounds hollow when tapped on the bottom.
  11. Let it cool on a wire rack before slicing.
