Ingredients:

  • 300g flour
  • 100g carrot, grated
  • 100g zucchini, grated
  • 1 tsp salt
  • 1 tsp sugar
  • 7g dry yeast
  • 200ml warm water
  • 2 tbsp olive oil

Instructions:

  1. In a large mixing bowl, combine the flour, grated carrot, grated zucchini, salt, and sugar.
  2. In a separate small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy.
  3. Pour the yeast mixture and olive oil into the dry ingredients and mix until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  6. Preheat your oven to 190°C (375°F).
  7. Punch down the risen dough, shape it into a loaf, and place it in a greased loaf pan.
  8. Let it rise for another 30 minutes while the oven is preheating.
  9. Bake the bread in the preheated oven for 30-35 minutes, or until golden brown and sounds hollow when tapped on the bottom.
  10. Allow the bread to cool on a wire rack before slicing.
