Ingredients:

  • 200g flour
  • 100g spinach
  • 100g cheese
  • 2 eggs
  • 50ml milk
  • 1 tsp salt
  • 1 tsp baking powder

Instructions:

  1. Preheat the oven to 180°C.
  2. In a mixing bowl, combine the flour, baking powder, and salt.
  3. In another bowl, whisk together the eggs and milk until well combined.
  4. Add the spinach and cheese to the egg mixture and mix well.
  5. Combine the wet and dry ingredients until just mixed; do not overmix.
  6. Pour the batter into a greased muffin tin, filling each cup about ¾ full.
  7. Bake in the preheated oven for 20-25 minutes or until golden brown and a toothpick comes out clean.
  8. Let cool for a few minutes before removing from the tin.
