Refreshing Watermelon Sorbet with Mint

Refreshing Watermelon Sorbet with Mint

This refreshing watermelon salad is a delightful blend of sweet, juicy watermelon, zesty lime, and fragrant mint. Perfect for a summer picnic or a light dessert, this dish captures the essence of summer in every bite.

Ingredients:

  • 4 cups watermelon, cubed and seeded
  • 1/2 cup granulated sugar
  • 1 tablespoon fresh lime juice
  • 1/4 cup fresh mint leaves, chopped
  • 1 teaspoon lime zest
  • 1 cup coconut water (or regular water)

Instructions:

  1. Prepare the watermelon by cutting it into cubes, ensuring it is seedless for a smoother texture.
  2. In a blender, combine the cubed watermelon, granulated sugar, lime juice, and coconut water. Blend until completely smooth.
  3. Add the chopped mint leaves and lime zest to the blender, blending briefly to incorporate without completely pulverizing the mint.
  4. Taste the mixture and adjust sweetness if necessary, adding more sugar or lime juice to taste.
  5. Pour the blended mixture into a shallow dish or a metal container. Cover with plastic wrap and freeze for at least 4 hours, or until firm.
  6. Every hour or so, use a fork to scrape the mixture, creating a light texture and preventing large ice crystals from forming.
  7. Once the sorbet is completely frozen, allow it to sit at room temperature for about 5-10 minutes before serving to soften slightly.
  8. Scoop the sorbet into bowls, garnish with additional mint leaves if desired, and enjoy your refreshing dessert!
