Rainbow Veggie Salad

Ingredients:

  • 2 carrots, grated
  • 1 cucumber, diced
  • 200g broccoli, chopped
  • 125g spinach, fresh

Instructions:

  1. Start by washing all the vegetables thoroughly.
  2. Grate the carrots and place them in a large mixing bowl.
  3. Dice the cucumber and add it to the bowl with the grated carrots.
  4. Chop the broccoli into small florets and steam it for about 3-4 minutes until tender but still crisp.
  5. Once the broccoli has cooled, add it to the mixing bowl.
  6. Add the fresh spinach leaves to the bowl.
  7. Toss all the ingredients together gently until well mixed.
  8. Drizzle with your favorite dressing, season with salt and pepper, and serve immediately.
