Mediterranean Veggie Wrap

A delicious and healthy Mediterranean Veggie Wrap filled with fresh vegetables and creamy avocado, perfect for a light lunch or snack.

Ingredients:

  • 1 large tortilla
  • 1/2 avocado
  • 1/2 cucumber
  • 1/2 bell pepper
  • handful of spinach
  • 2 tablespoons of hummus

Instructions:

  1. Start by spreading the hummus evenly on the tortilla.
  2. Slice the avocado and cucumber thinly.
  3. Julienne the bell pepper and wash the spinach leaves.
  4. Layer the avocado, cucumber, bell pepper, and spinach on top of the hummus-covered tortilla.
  5. Wrap the tortilla tightly around the fillings, folding in the sides as you go.
  6. Cut the wrap in half and serve immediately.
