A delicious and healthy Mediterranean Veggie Wrap filled with fresh vegetables and creamy avocado, perfect for a light lunch or snack.
Ingredients:
- 1 large tortilla
- 1/2 avocado
- 1/2 cucumber
- 1/2 bell pepper
- handful of spinach
- 2 tablespoons of hummus
Instructions:
- Start by spreading the hummus evenly on the tortilla.
- Slice the avocado and cucumber thinly.
- Julienne the bell pepper and wash the spinach leaves.
- Layer the avocado, cucumber, bell pepper, and spinach on top of the hummus-covered tortilla.
- Wrap the tortilla tightly around the fillings, folding in the sides as you go.
- Cut the wrap in half and serve immediately.
