Mediterranean Veggie Wrap
A delicious and healthy Mediterranean Veggie Wrap loaded with fresh vegetables and a creamy avocado spread.
Ingredients:
- 1 large tortilla
- 1 ripe avocado
- 100g spinach
- 100g cucumber
- 100g bell pepper
- 50g feta cheese
- Salt to taste
- Pepper to taste
- 1 tbsp lemon juice
Instructions:
- In a bowl, mash the ripe avocado using a fork until smooth.
- Stir in lemon juice, salt, and pepper to the mashed avocado to create a creamy spread.
- Lay the tortilla flat on a clean surface and spread the avocado mixture evenly over the surface.
- Layer the spinach, sliced cucumber, and chopped bell pepper on top of the avocado spread.
- Sprinkle crumbled feta cheese over the vegetables.
- Carefully roll the tortilla tightly, tucking in the sides as you go to create a wrap.
