Mediterranean Veggie Wrap

A delicious and healthy Mediterranean Veggie Wrap loaded with fresh vegetables and a creamy avocado spread.

Ingredients:

  • 1 large tortilla
  • 1 ripe avocado
  • 100g spinach
  • 100g cucumber
  • 100g bell pepper
  • 50g feta cheese
  • Salt to taste
  • Pepper to taste
  • 1 tbsp lemon juice

Instructions:

  1. In a bowl, mash the ripe avocado using a fork until smooth.
  2. Stir in lemon juice, salt, and pepper to the mashed avocado to create a creamy spread.
  3. Lay the tortilla flat on a clean surface and spread the avocado mixture evenly over the surface.
  4. Layer the spinach, sliced cucumber, and chopped bell pepper on top of the avocado spread.
  5. Sprinkle crumbled feta cheese over the vegetables.
  6. Carefully roll the tortilla tightly, tucking in the sides as you go to create a wrap.
  7. Slice the wrap in half and serve with your favorite dipping sauce if desired.
