Mediterranean Veggie Wrap
A refreshing Mediterranean Veggie Wrap filled with vibrant vegetables and creamy avocado, perfect for a healthy lunch or snack.
Ingredients:
- 1 large tortilla
- 100g spinach
- 1 medium cucumber
- 1 medium tomato
- 1 ripe avocado
- 50g feta cheese (optional)
- Olive oil
- Salt
- Pepper
Instructions:
- Lay the tortilla flat on a clean surface.
- Spread the spinach evenly over the tortilla to create a bed of greens.
- Thinly slice the cucumber and tomato, then layer them on top of the spinach.
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork, and season with salt and pepper.
- Spread the mashed avocado over the veggies on the tortilla.
- If using, crumble the feta cheese over the wrap.
- Drizzle with a little olive oil for added flavor.
- Wrap the tortilla tightly, folding in the sides as you roll it up from the bottom.
