A refreshing Mediterranean Veggie Wrap filled with vibrant vegetables and creamy avocado, perfect for a healthy lunch or snack.

Ingredients:

  • 1 large tortilla
  • 100g spinach
  • 1 medium cucumber
  • 1 medium tomato
  • 1 ripe avocado
  • 50g feta cheese (optional)
  • Olive oil
  • Salt
  • Pepper

Instructions:

  1. Lay the tortilla flat on a clean surface.
  2. Spread the spinach evenly over the tortilla to create a bed of greens.
  3. Thinly slice the cucumber and tomato, then layer them on top of the spinach.
  4. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork, and season with salt and pepper.
  5. Spread the mashed avocado over the veggies on the tortilla.
  6. If using, crumble the feta cheese over the wrap.
  7. Drizzle with a little olive oil for added flavor.
  8. Wrap the tortilla tightly, folding in the sides as you roll it up from the bottom.
  9. Slice in half and serve immediately or wrap in foil for later.
