Mediterranean Vegetable Wrap
A delicious and healthy Mediterranean Vegetable Wrap filled with fresh veggies and a creamy avocado spread, perfect for lunch or a light dinner.
Ingredients:
- 1 whole grain tortilla
- 1 ripe avocado
- 50g spinach
- 50g bell pepper
- 50g cucumber
- 50g tomato
- Salt
- Pepper
Instructions:
- Mash the avocado in a bowl and season with salt and pepper to taste.
- Spread the mashed avocado evenly over the tortilla.
- Layer the spinach, sliced bell pepper, cucumber, and diced tomato on top of the avocado layer.
- Roll the tortilla tightly, folding in the sides to enclose the filling.
- Cut the wrap in half and serve immediately, or wrap in foil for later.
