A delicious and healthy Mediterranean Vegetable Wrap filled with fresh veggies and a creamy avocado spread, perfect for lunch or a light dinner.

Ingredients:

  • 1 whole grain tortilla
  • 1 ripe avocado
  • 50g spinach
  • 50g bell pepper
  • 50g cucumber
  • 50g tomato
  • Salt
  • Pepper

Instructions:

  1. Mash the avocado in a bowl and season with salt and pepper to taste.
  2. Spread the mashed avocado evenly over the tortilla.
  3. Layer the spinach, sliced bell pepper, cucumber, and diced tomato on top of the avocado layer.
  4. Roll the tortilla tightly, folding in the sides to enclose the filling.
  5. Cut the wrap in half and serve immediately, or wrap in foil for later.
