Mediterranean Stuffed Zucchini

A delicious and healthy Mediterranean stuffed zucchini dish filled with ground beef, tomatoes, and spices, perfect for a main course.

Ingredients:

  • 2 medium zucchini
  • 300g ground beef
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian herbs

Instructions:

  1. Preheat your oven to 190°C (375°F).
  2. Slice the zucchinis in half lengthwise and scoop out a bit of the flesh to create boats.
  3. In a pan, heat olive oil over medium heat, and sauté the chopped onion until translucent.
  4. Add minced garlic and ground beef to the pan, cook until the beef is browned.
  5. Stir in the chopped tomatoes, Italian herbs, salt, and pepper. Let it cook for about 5 minutes.
  6. Fill the zucchini boats with the beef mixture.
  7. Place the stuffed zucchinis on a baking sheet and bake in the oven for about 25-30 minutes until the zucchinis are tender.
  8. Serve hot.
