Mediterranean Stuffed Zucchini
A delicious and healthy Mediterranean stuffed zucchini dish filled with ground beef, tomatoes, and spices, perfect for a main course.
Ingredients:
- 2 medium zucchini
- 300g ground beef
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
- 1 teaspoon Italian herbs
Instructions:
- Preheat your oven to 190°C (375°F).
- Slice the zucchinis in half lengthwise and scoop out a bit of the flesh to create boats.
- In a pan, heat olive oil over medium heat, and sauté the chopped onion until translucent.
- Add minced garlic and ground beef to the pan, cook until the beef is browned.
- Stir in the chopped tomatoes, Italian herbs, salt, and pepper. Let it cook for about 5 minutes.
- Fill the zucchini boats with the beef mixture.
- Place the stuffed zucchinis on a baking sheet and bake in the oven for about 25-30 minutes until the zucchinis are tender.
- Serve hot.
