Mediterranean Spinach Salad
A vibrant and refreshing Mediterranean Spinach Salad featuring fresh vegetables and a zesty dressing. Perfect for a light meal or side dish.
Ingredients:
- 100g fresh spinach
- 50g feta cheese
- 50g cherry tomatoes
- 30ml olive oil
- 20ml lemon juice
- 10g black olives
- to taste salt
- to taste pepper
Instructions:
- Rinse the fresh spinach leaves under cold water and dry them well.
- Cut the cherry tomatoes in half and add them to a large mixing bowl with the spinach.
- Crumble the feta cheese over the top of the salad.
- Add the black olives to the mixing bowl.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss gently to combine.
