  • 2 medium tomatoes
  • 50g feta cheese
  • 30ml olive oil
  • 15ml lemon juice
  • salt to taste
  • pepper to taste

Instructions:

  1. Wash the fresh spinach thoroughly and dry it using a salad spinner or paper towels.
  2. Chop the cucumber, bell pepper, and tomatoes into bite-sized pieces.
  3. In a large salad bowl, combine the spinach, cucumber, bell pepper, and tomatoes.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to prepare the dressing.
  5. Pour the dressing over the salad and toss gently to combine all the ingredients.
  6. Top the salad with crumbled feta cheese if desired and serve immediately.
