Mediterranean Spinach Salad

Ingredients:

  • 150g fresh spinach
  • 100g cherry tomatoes
  • 70g cucumber
  • 50g feta cheese
  • 20ml olive oil
  • 10ml balsamic vinegar
  • Salt
  • Pepper

Instructions:

  1. Rinse the fresh spinach thoroughly and pat dry with a kitchen towel.
  2. Cut the cherry tomatoes in half and the cucumber into thin slices.
  3. In a large mixing bowl, combine the spinach, cherry tomatoes, and cucumber.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  5. Drizzle the dressing over the salad and toss to combine.
  6. Serve immediately, optionally topped with crumbled feta cheese.
