Ingredients:

  • 200g quinoa
  • 100g cucumber
  • 100g cherry tomatoes
  • 50g bell pepper
  • 50g red onion
  • 50ml olive oil
  • 30ml lemon juice
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Rinse the quinoa under cold water, then cook it according to the package instructions. Once cooked, let it cool.
  2. Dice the cucumber, cherry tomatoes, bell pepper, and red onion into small pieces.
  3. In a large bowl, combine the cooled quinoa, diced vegetables, olive oil, lemon juice, salt, and pepper.
  4. Mix everything gently until well combined. Adjust seasoning to taste.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.
  6. Garnish with fresh parsley before serving.
