Ingredients:
- 200g quinoa
- 100g cucumber
- 100g cherry tomatoes
- 50g bell pepper
- 50g red onion
- 50ml olive oil
- 30ml lemon juice
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
Instructions:
- Rinse the quinoa under cold water, then cook it according to the package instructions. Once cooked, let it cool.
- Dice the cucumber, cherry tomatoes, bell pepper, and red onion into small pieces.
- In a large bowl, combine the cooled quinoa, diced vegetables, olive oil, lemon juice, salt, and pepper.
- Mix everything gently until well combined. Adjust seasoning to taste.
