Mediterranean Fish and Potato Bake
A healthy Mediterranean-inspired dish featuring fish fillets and potatoes, baked to perfection with herbs and spices.
Ingredients:
- 500g potatoes, peeled and sliced
- 300g fish fillets (any white fish)
- 30ml olive oil
- 2 cloves garlic, minced
- 10g fresh parsley, chopped
- 10g fresh dill, chopped
- 1 lemon, juiced
- Salt and pepper to taste
- 200ml vegetable broth
Instructions:
- Preheat your oven to 200°C (392°F).
- In a large baking dish, layer the sliced potatoes at the bottom.
- Drizzle half of the olive oil over the potatoes and season with salt and pepper. Toss to coat evenly.
- Arrange the fish fillets on top of the potatoes.
- In a bowl, mix the minced garlic, remaining olive oil, lemon juice, parsley, dill, and vegetable broth. Pour this mixture over the fish and potatoes.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for another 5-10 minutes until the fish is cooked through and the potatoes are tender.
- Serve immediately, garnished with extra herbs if desired.
