Mediterranean Fish and Potato Bake

A healthy Mediterranean-inspired dish featuring fish fillets and potatoes, baked to perfection with herbs and spices.

Ingredients:

  • 500g potatoes, peeled and sliced
  • 300g fish fillets (any white fish)
  • 30ml olive oil
  • 2 cloves garlic, minced
  • 10g fresh parsley, chopped
  • 10g fresh dill, chopped
  • 1 lemon, juiced
  • Salt and pepper to taste
  • 200ml vegetable broth

Instructions:

  1. Preheat your oven to 200°C (392°F).
  2. In a large baking dish, layer the sliced potatoes at the bottom.
  3. Drizzle half of the olive oil over the potatoes and season with salt and pepper. Toss to coat evenly.
  4. Arrange the fish fillets on top of the potatoes.
  5. In a bowl, mix the minced garlic, remaining olive oil, lemon juice, parsley, dill, and vegetable broth. Pour this mixture over the fish and potatoes.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  7. Remove the foil and bake for another 5-10 minutes until the fish is cooked through and the potatoes are tender.
  8. Serve immediately, garnished with extra herbs if desired.
