  • 1 cucumber, chopped
  • 1 bell pepper, diced
  • 200g cherry tomatoes, halved
  • 100g feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. In a large bowl, combine the chopped cucumber, diced bell pepper, and halved cherry tomatoes.
  2. Add the drained chickpeas and crumbled feta cheese to the bowl.
