Ingredients:

  • 400g canned chickpeas
  • 150g cucumber
  • 200g cherry tomatoes
  • 100g bell pepper
  • 50g red onion
  • 30ml olive oil
  • 15ml lemon juice
  • 20g fresh parsley
  • salt
  • pepper

Instructions:

  1. Rinse the canned chickpeas under cold water and drain well.
  2. Chop the cucumber, cherry tomatoes, and bell pepper into bite-sized pieces.
  3. Finely chop the red onion and fresh parsley.
  4. In a large bowl, combine the chickpeas, cucumber, cherry tomatoes, bell pepper, red onion, and parsley.
  5. Drizzle with olive oil and lemon juice, and season with salt and pepper to taste.
  6. Toss the salad gently to combine all ingredients well.
  7. Serve immediately or refrigerate for an hour to let flavors meld.
