Mediterranean Chickpea Salad

A refreshing Mediterranean Chickpea Salad made with fresh vegetables and chickpeas, perfect for a healthy lunch or side dish.

Ingredients:

  • 400g chickpeas
  • 100g cucumber
  • 100g tomato
  • 50g onion
  • 50g bell pepper
  • 30ml olive oil
  • 15ml lemon juice
  • Salt
  • Pepper
  • Parsley

Instructions:

  1. Rinse and drain the chickpeas.
  2. Dice the cucumber, tomato, onion, and bell pepper into small pieces.
  3. In a large bowl, combine the chickpeas, diced cucumber, tomato, onion, and bell pepper.
  4. Drizzle with olive oil and lemon juice.
  5. Season with salt and pepper to taste.
  6. Toss well to combine and garnish with parsley.
