Mediterranean Chickpea Salad

A refreshing Mediterranean Chickpea Salad loaded with flavor and nutrients. Perfect as a side dish or a light meal.

Ingredients:

  • 400 g canned chickpeas, drained and rinsed
  • 1 medium cucumber, diced
  • 2 medium tomatoes, diced
  • 1 medium bell pepper, diced
  • 100 g feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • salt to taste
  • pepper to taste
  • fresh parsley, chopped

Instructions:

  1. In a large bowl, combine the rinsed chickpeas, diced cucumber, diced tomatoes, and diced bell pepper.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad ingredients.
  4. Toss everything together lightly to combine.
  5. Garnish with crumbled feta cheese and chopped fresh parsley before serving.
