Ingredients:

  • 400g canned chickpeas, drained
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 bell pepper, diced
  • 1 red onion, finely chopped
  • 50ml olive oil
  • 30ml lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions:
