A refreshing Mediterranean Chickpea Salad packed with protein and flavor, perfect as a light meal or side dish!
Ingredients:
- 400g canned chickpeas, drained and rinsed
- 200g cherry tomatoes, halved
- 100g cucumber, diced
- 50g red onion, finely chopped
- 30ml olive oil
- 15ml lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
