Mediterranean Chickpea Salad

Ingredients:

  • 400g canned chickpeas
  • 100g cucumber
  • 100g tomato
  • 50g red onion
  • 30ml olive oil
  • 15ml lemon juice
  • salt to taste
  • pepper to taste
  • fresh parsley for garnish

Instructions:

  1. Rinse and drain the canned chickpeas. In a large bowl, combine the chickpeas, diced cucumber, diced tomato, and finely chopped red onion.
