Ingredients:

  • 2 chicken breasts (about 300g each)
  • 1 large zucchini, sliced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 400g canned tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. In a baking dish, drizzle 2 tablespoons of olive oil and add the chopped onion, minced garlic, sliced carrots, and zucchini.
  3. Season the vegetables with salt, pepper, and dried oregano, mixing well to combine.
  4. Place the chicken breasts on top of the vegetables and pour the canned tomatoes over everything.
  5. Cover the baking dish with aluminum foil and bake for 25 minutes for the chicken to cook thoroughly.
