Ingredients:
- 2 chicken breasts (about 300g each)
- 1 large zucchini, sliced
- 2 carrots, sliced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 400g canned tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Preheat your oven to 200°C (400°F).
- In a baking dish, drizzle 2 tablespoons of olive oil and add the chopped onion, minced garlic, sliced carrots, and zucchini.
- Season the vegetables with salt, pepper, and dried oregano, mixing well to combine.
