Ingredients:

  • 400g chicken thighs
  • 2 medium zucchinis
  • 2 medium tomatoes
  • 2 medium potatoes
  • 1 large onion
  • 4 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. In a large baking dish, combine the chopped onion, diced tomatoes, sliced zucchini, and cubed potatoes.
  3. Drizzle with olive oil and season with salt, pepper, and dried oregano. Mix well to combine.
