Ingredients:

  • 2 chicken breasts
  • 2 carrots
  • 1 zucchini
  • 1 bell pepper
  • 2 tomatoes
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the olive oil, minced garlic, dried oregano, salt, and pepper.
  3. Add the chicken breasts to the bowl and coat them well with the marinade.
  4. Chop the carrots, zucchini, bell pepper, and tomatoes into bite-sized pieces.
  5. In a baking dish, place the marinated chicken breasts in the center and surround them with the chopped vegetables.
  6. Drizzle a little more olive oil over the vegetables and season with additional salt and pepper if desired.
  7. Cover the dish with aluminum foil and bake for about 25 minutes.
  8. Remove the foil and bake for another 15 minutes, or until the chicken is cooked through and the vegetables are tender.
