Ingredients:

  • 2 chicken breasts (about 400g)
  • 2 tomatoes (diced)
  • 1 zucchini (sliced)
  • 1 bell pepper (sliced)
  • 2 cloves of garlic (minced)
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, mix the diced tomatoes, sliced zucchini, sliced bell pepper, minced garlic, olive oil, oregano, salt, and pepper.
  3. Add the chicken breasts to the bowl and coat them well with the vegetable mixture.
  4. Transfer everything to a baking dish and spread it out evenly.
  5. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Serve hot, garnished with fresh herbs if desired.
