Hearty Vegetable Soup

A nourishing and delightful Hearty Vegetable Soup packed with flavors and nutrients, perfect for any day of the week.

Ingredients:

  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tomatoes, chopped
  • 1 zucchini, diced
  • 1 cup spinach, chopped
  • 1 liter vegetable broth
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions:

  1. Heat a tablespoon of olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until translucent.
  3. Stir in the diced carrots and potatoes, cooking for another 5 minutes.
  4. Add the chopped tomatoes and zucchini, mixing well.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce the heat and let it simmer for 20-25 minutes, or until the vegetables are tender.
  7. Stir in the chopped spinach and cook for an additional 5 minutes.
  8. Season with salt and pepper to taste and serve hot.
