Ingredients:

  • carrot
  • potato
  • onion
  • garlic
  • tomato
  • zucchini
  • broccoli
  • peas
  • spinach
  • celery
  • herbs (optional)
  • vegetable stock

Instructions:

  1. Chop all vegetables into bite-sized pieces.
  2. In a large pot, heat some oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the carrots, celery, and potato, and cook for about 5 minutes, stirring occasionally.
  4. Stir in the tomato, zucchini, and broccoli, and cook for another 5-7 minutes.
  5. Pour in the vegetable stock and bring to a boil.
  6. Reduce the heat and simmer for about 20 minutes until the vegetables are tender.
  7. Add the peas and spinach, and cook for an additional 5 minutes.
  8. Season with salt, pepper, and herbs to taste.
  9. Serve hot with a slice of bread.
