Ingredients:

  • 2 carrots, diced
  • 1 onion, chopped
  • 2 potatoes, diced
  • 2 tomatoes, chopped
  • 1 zucchini, diced
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions:

  1. In a large pot, heat a tablespoon of oil over medium heat.
  2. Add the chopped onion and diced carrot. Sauté until the onion is translucent.
  3. Stir in the diced potatoes and zucchini, cooking for another 5 minutes.
  4. Add the chopped tomatoes, followed by the vegetable broth. Bring to a boil.
